Meatless Monday: CBLT

The first tomatoes are ripening from our garden.


I wanted a vegetarian BLT, and I made a batch of coconut bacon. The recipe is from Joyful Vegan, and I really like it. I do have to carefully watch these in the oven so they do not burn.


Here is my yummy "CBLT" made mostly with ingredients from the farmers' market and our garden.

So interesting -- I've never heard of coconut bacon! I usually use tempeh and a marinade similar to what's used in the recipe. I will have to try this. I love (fake B)LT's :)

I really like the flavor that liquid smoke adds to our veggie options. I have only had tempeh in stir fry, and I need to try some tempeh "bacon."
